Menu of the week

I have changed the format of my menus and will stick to publish our weekday menus, I think those are the days when people most often are looking for inspiration. The days when you are short on time and want dinner to be done in less than 30 minutes. On the weekends on the other hand people tend to spend both more time and money on their meals. My menus are to be seen as inspirations or just click on the links to get the recipe. Mondays will continue to be meatless (Meatless Monday). As long as we have Swedish school we will eat soups on Thursdays, dinner simply needs to be on the table in 5 min and most likely you will find one fish dish each week. When I planned what to cook this week I did not look at the weather forecast and thought that a nice chili would be good in October but they promise over 80 degrees this week so we´ll see the ground beef I bought might turn into something else.

I had some left over Butternut squash last week so I found a pancake recipe with pumpkin puree, oats and cottage cheese. The kids loved them and they were a great snack and perfect to have in the freezer as well.

Monday Spaghetti squash with cherry tomatoes, spinach, pine nuts and Parmesan

Tuesday Apple cabbage slaw with chicken sausages, mashed potatoes

Wednesday Chili con carne, couscous

Thursday Cauliflower soup

Friday Pan seared Tuna with avocado, soy, ginger and lime, Basmati rice, green salad
